I did a wedding cake with soy flour. Soy flour is 16 carbs per cup and you need 3 cups.What are you trying to make?Do you have a recipe? ;)

No, I don't have a recipe.  I just thought it would be nice to have one since they can be so versatile.  Not only could you put berries and whip cream on it but you could also make a jello cake ;D

Angelfood is probablly what you are looking for and very easy to make.Its made with egg whites,very low ;)

Here ya go Mimzy! This didn't make the Bakery book because they fall real easy.But the taste is great and the whole cake made with just whites is 5 carbs. ;)

ANGELFOOD CAKE
•   1 ½ water for the just whites( if using regular egg whites omit this)
•   2 teaspoons cream of tartar
•   ¾ cup Just Whites egg whites (or 16 egg whites)
•   1 pinch salt
•   ¾ cup xylitol
•   1 cup almond flour
•   ¼ cup xylitol
•   2 teaspoon vanilla extract
Directions
1.   Preheat oven to 350 degrees
2.   In a large clean bowl, whip egg whites powder,water with a pinch of salt until foamy and continue beating until soft peaks form.
3.   Gradually add ¾ cup xylitol while beating, and continue to beat until very stiff. Add vanilla. Beat.
4.   In a separate bowl, mix almond flour and ¼ cup xylitol.
5.   Gently fold in  almond flour mixture into egg mixture. 
6.   Spray pan with non stick cooking spray.
7.   Pour into a 10 inch tube pan.
8.   Bake at 350 for 35-40 minutes. (if you overbake o r slam oven door,it will fall)
