Bran Muffins

Umpa (or any of you other creative FTSers), have you ever tried to make bran muffins using the GG Bran Sprinkles?  I saw the sprinkles the other day and wondered if it was possible.
Here is my old recipe (you don't need to follow this recipe, I just posted it as a guideline.  I just miss the taste of Bran Muffins.  Maybe even a variation of the One Minute Muffin would work):

QUAKER BRAN MUFFINS

Ingredients:
1/4 cup shortening
1/2 cup brown sugar
1/4 cup molasses (sometimes I substituted honey)
2 eggs
1 cup milk
1 1/2 cups Quaker Wheat Bran
1 cup flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
3/4 teaspoon salt
1/2 cup raisins (optional)

Directions
Preheat oven to 400*F. Line 12 muffin tins with paper liners. Cream together shortening and sugar. Add molasses and eggs, beating well. Add milk and bran. Mix together flour, baking powder, baking soda and salt. Add to the wet mixture. Stir in raisins, if using. Divide among the muffin tins and bake for 18 - 20 minutes.

Hi ShihTzuMom1! :)

I've experimented making bran muffins using wheat bran, GG Sprinkles, and flax flour (separately and in various combinations).

I have been unable to duplicate the poison version's distinctive "brany sweet" flavor.
That flavor must come from the molasses and brown sugar.

I was able to make muffins that tasted like sweetened bran by using xylitol.
They were OK flavorwise. But just not the same as the genuine article.

Hopefully, Umpa (or someone) has found a way to do it.
What you do today is what matters!

Ingredients:

1/2 cup brown sugar (* i would replace this and the molasses with sugarfree maple syrup 1/2 cup)
1/4 cup molasses (sometimes I substituted honey)*dont use the sugar free honey it will turn bitter
2 eggs
1 cup milk*vanilla almond unsweetened milk
1 1/2 cups Quaker Wheat Bran ** use the brancrisp sprinkles
1 cup flour( **one cup flaxseed flour 
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
3/4 teaspoon salt
1/2 cup raisins (optional) *OMIT
****Let me know how this works.i would make smaller  muffins though minis or only half fill muffin tins.

Umpa, I am just getting around to making the bran muffins.  I just wanted to clarify the SF maple syrup substitute.  Did you mean for me to put a total of a 1/2 cup of the syrup in place of the brown sugar and molasses together?  Or 1/2 cup syrup for the brown sugar and 1/2 cup syrup for the molasses?

Umpa, I made the Mini Bran Muffins.  They had that nice bran taste, but could have been a little sweeter.  I also could taste the salt.  I just put a little SF jam or SF honey on them when I eat them to make them taste sweeter.

I'm thinking next time I will add some xylitol in with the shortening, would be easier to cream together, plus the 1/2 cup of SF Maple Syrup.  I'm not sure how much xylitol to try.  Maybe 1/4 of a cup.  What do you think?  Should I still keep the same amount of salt or cut that back to not taste it?

Once the recipe is perfected I'll post it on the recipe board.  It's still a work in progress.

Keep the salt. How many did it make??(I need to know to give you the xylitol measurement) Are you sure you are not tasting baking soda?Sometimes if I put too much baking soda I get that *overly salty* sensation. :)

Umpa it made 36 mini muffins.  I never thought about the baking soda, it just had a salty taste, maybe because they weren't sweet enough.

1/4 cup xylitol should be perfect for 36.Taste your batter before you put it in the pan then add more if needed.I dont like supersweet. ;) Dont increase the syrup though,it will be too much liquid :)
