                  Cheesy Spinach

10-oz. package of frozen spinach or bag of fresh
2 T. water
2 wedges Laughing Cow brand lite garlic herb or French onion cheese

Place frozen spinach in microwaveable bowl with water. Microwave spinach on high setting for 8 minutes, stirring once.
Remove from microwave and add cheexe.  Stir until cheese melts.
If fresh spinach place in a large skillet with water and cook over medium heat until done. Add cheese and stir until it melts.

This is a great way to get in much needed fiber.  I prefer the fresh spinach, which only has 5 carbs for the whole recipe.
If you enjoy cheesy broccoli you should like this recipe.

I hope you like it Umpa.  I used to use Philadelphia onion and chive cream cheese in my spinach.  The carb count is higher than the Laughing Cow.  It tastes like creamed spinach.  I try to eat alot of vegetables.
