Bread pudding?

Hi,
Does anyone know any good low carb bread pudding recipes? Or maybe a way to make bread pudding low carb? Thanks

Interesting challenge :) Bread pudding was originally developed to use up the old stale bread in ones house. There are several variations to the recipe but here is the basic recipe. Bread pudding calls for eggs beaten with sugar and cinnamon then chunks of stale bread are mixed into the eggs along with some raisins. The mixture is then transferred to a baking dish and placed into the oven to cook and set. Served warm with whip cream or vanilla ice cream it was a favorite in my house when I was  a FAT kid :)

Of course the biggest challenge here is to replace the bread with something else. Most all the breads we bake start with a flax or almond meal flour. I'm not sure how they will hold up when wet.  We go light on soy flours when baking to keep carb counts down. Next time Umpa bakes a loaf of bread I'll play around with the recipe and see what we can come up with.  ;)

I am umpa , dougs wife.If I can help you please ask.I have a column on the homepage called ask umpa where I can convert your favorite foods to fat to skinny friendly.Bread pudding is one request i haven't gotten yet.Doug and I will work on this one!I think it can be done. ;)

Congratulations!!!... You've found a way to stump Doug and Umpa (our fearless leaders) from post number one! ;) ;) ;)

I too, in my younger FAT days, I loved my mom's bread pudding!
I never once thought about eating it again since I've been living the FTS lifestyle.
Let's hope Doug and Umpa can solve this!
Otherwise, I'll have to find a way to forget about bread pudding all over again! :-\

Hi Umpa!

If my mom were still among us, I'd get her recipe.

Over the years, I've seen many bread pudding recipes on the web that were much like it.
Typically, they have bread (usually white) without (and some with) crust, sugar, raisins, and cinnamon all blended together with some milk or cream.
This mess of carbs is then baked until a little brown on top.

I hope this gives you some clues! ;)

Umpa I found this one on line but it is real close to the one my mother and grandmother always made I hope it helps:

Bread Pudding
Ingredients:

2 cups whole milk (or 2 cups half & half)
1/4 cup butter
2/3 cup brown sugar (light or dark, depending on taste preference)
3 eggs
2 teaspoons cinnamon
1/4 teaspoon ground nutmeg
1 teaspoon vanilla extract
3 cups bread, torn into small pieces (french bread works best)
1/2 cup raisins (optional)


Directions:

1. In medium saucepan, over medium heat, heat milk (or half & half) just until film forms over top. Combine butter and milk, stirring until butter is melted. Cool to lukewarm.

2. Combine sugar, eggs, cinnamon, nutmeg, and vanilla. Beat with an electric mixer at medium speed for 1 minute. Slowly add milk mixture.

3. Place bread in a lightly greased 1 1/2 quart casserole.

4. Sprinkle with raisins if desired. Pour batter on top of bread.

5. Bake at 350 degrees F for 45 to 50 minutes or until set. Serve warm.

My mother would always make a home made lemon pudding (leaving it warm) to put on just before serving it wouldn't need it though..... very good without.
