Broccoli broccoli broccoli

Hi,
On here, in Doug’s books, everywhere I go on the internet, everyone has a different tale to tell when it comes
to net carbs in broccoli. I have never seen such discrepancies in all my life. How do we know what is true?
I’m talking cooked, with stems, and Doug’s books as far as I know only list raw. Net carbs changes when cooked? when cooked? More or less? if so, why? 2 sites said I found said 3.6 net carbs per cup cooked, the rest were all different. Anyone have thoughts on this? What about Cauliflower? Net carbs for the mashed kind Doug invented? Thanks

Hey Awesome - Pretty sure the net carbs won't change between cooked and raw for any veg.  The net carbs for the mashed cauliflower should be the same as regular cauliflower; of course that is dependant on what you put in them too!

Hi F2S-Awesome! :)

Cooking certain foods changes their cellular composition which can effect carb count.
Also, cooking will cause some to take up less space (volume) from "wilting down" but not reduce their carb content.

For veggies, I always use "raw" as the type to base my measurements and counts.

According to the USDA's Nutrient Database, 1 cup of raw broccoli has 6.04 total carbs with 2.40 fiber carbs for 3.64 net grams.
Rounding this up to 4 per cup or 2 per 1/2 cup is a safe bet as broccoli is quite irregular in size. ;)

Broccoli- 2 net carbs per 1/2 cup cooked or raw

Caulimash- 1.5 net carbs per 1/2 cup cooked or raw
