I followed the recipe and used 2 cups in the first part and then 1 cup later. It makes a large 9 x 13 pan of very thick brownies. I think we can get 32 servings out of it, like the recipe says. Thankfully, it's easing up for the moment so I can type this much!!!
I think it's still worth it. Those brownies are a great substitution when you want a real one. I think I will cut them and freeze individual portions (SMALL!!!!) for later.

I am learning to think before I speak, but now I need to think before I eat!!! I was just delighting in the flavors of my steak strips, onion, garlic, mushrooms that I made for lunch....until I realized that it may BACKFIRE on me!!!

YES, PUN INTENDED!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!

You are very sensitive to this sweetener, have you tried using Stevia powder in your recipes?

Not yet... I also ate an unknown brand of sausage at breakfast today. I  have been hoping that it was caused by the sausage. I will try a brownie again tomorrow to test my theory.

I just made these and they are in the oven now....my husband, the skeptic, said they smelled good while I was making them. lol  It's a lot of work but hopefully they will turn out well.  I made them in the pan instead of mini muffins because I tend to cook them too long...I wonder how much time you would cut back for mini muffins instead of the 9x13 pan?

I can sure appreciate our grandmothers and moms spending all that time to make things from scratch for us. ;)  I've always used mixes so this was an interesting adventure. lol  So far the best things I've made are the spinach muffins and homemade chocolate.

Can't wait to taste these after they cool....

1 hour later: Wow pretty good and same texture as regular brownies...they are awesome with some whipped cream on them. :)

Cream would be heavy cream (or may say heavy whipping cream on the carton).  Comes in a carton like a quart or pint of milk.  Hope this helps.  I haven't tried these brownies yet.  Enjoy!
