Potato Salad

Im in dire need of potato salad. I like it kinda plain mayo lotsa mustard eggs and a little onion. Help me out umpa?

I made 2 recipes. I made one with sauted/boiled jicama it was great!(It actually softened up) And the other one I made with steamed cauliflower for people that cant get jicama.I took pictures and  i will post them today with the recipes.Good idea Beebs! We had it with Blackened Fish and it was so good! Doug kept saying ,"I anm eating potatoe salad!"

Guess what I had for dinner last night?? Take a look at the picture below and look for Umpa to post the recipe sometime today.

What's the carb count and the serving size. 1 cup or 1/2 cup? A pump wearer must know these things. :o

Sok. I just figured it out meself when I made the jicama potato salad. I dont have very good luck with the cauliflower.... I left out the celery and put extra mustard. It was SOOOOOOOOOOOO good. I thought I had died and gone to potato salad heaven. I had really been wanting that. It took almost an hour and a half for my jicama to soften up...

Good to know. I was planning to make the jicama/potato salad tonight. Last night, I made the beef stroganoff and the cheesecake! OMG, the cheesecake is to die for!!!!
