Lovin Chayote Squash

I tried it for the first time this weekend...first time peeled & steamed which was good but I found it to be a bit bland...then I tried it peeled, sliced and drizzled w/EVOO & on the grill  in my grill basket...a bit more flavor that way. Any suggestions for your favorite way to prepare it  would be appreciated  :) Thank you

Bella don't peel it, eat the green skin too.  I just poke it a few times with a fork and wrap in a paper towel and microwave it for 5 minutes.  Cut it up and eat it in place of a potato (including the skin).  I like to top it with butter and sour cream and sometimes add a little shredded cheddar cheese.  I usually just eat 1/2 as a serving.  My husband who is thin also likes them.

I do the same thing Shihtzumom :) a little garlic salt is nice too!  ;)

Slice it up like apple and put in oven with a little butter, Sugar Free Maple Syrup and you can sprinkle with cinnamon. Very good.

I did the same thing Amber did but I mixed up the one minute muffin with sweetener, cinnamon, nutmeg and a 1/4 cup chopped walnuts and put it on top before putting it in the oven.  If I remember I baked it at 350 for about 20-25 minutes.  This was pretty good.  My favorite though is to use them to replace a baked potato..... yum!!

Tonight we cooked the chayote on the BBQ.  I sprayed a large piece of tinfoil with Pam and cut the chayote into wedges (skin on) and put them on the foil.  I then topped it with a little sliced onion and dotted it with butter and wrapped it up as well as put an extra layer of foil around it so the butter wouldn't leak out.  My husband just turned it a few times so it didn't burn while the meat was cooking.  The chayote turned out very good.  Topped it with a little sour cream.  Yum!!

I want to try this squash!  So far, I just haven't been able to find it at Walmart, Ingles, Kroger or Publix.  When I'm shopping, I just keeping looking for something that looks like a little green "butt"  :-[ (thanks to Owensmath!  ha ha)   I may need to check with a produce manager and ask them to special order them.

Hey, Just this week I noticed that we have a new health food store that opened in town!  It's called "Good Nutrition", and apparently it's a chain store.  I haven't been in there yet, but I did call.  They carry Xylitol! Their 1 lb bag is $5.99 and the 2.5 lb bag is $12.99.  I won't have to mail order it anymore!  ;)  They also carry stevia.  I'm excited to go check it out!!

I finally found the chayote squash this weekend.  Tonight I tried it, and fixed it like Amber did.  OMG!!!  I really loved it!  Also, it made the whole house smell SO good while it was baking!  It was really like eating apples at Cracker Barrell.   Thanks Amber!!  I'll be making this again!   ;)

Ummmmmm...sounds really good.  Now I wish I had fixed the one I bought.  I "lost" it in the produce drawer after I bought it and had to toss it.   :-[

I did plant one but no luck.  I don't have a green thumb but I think the extreme heat here in Arkansas may have gotten the best of the squash!
