I've never been a fan of Spam no matter how it was fixed, but the "boys" in the family like it. While updating my "hurricane box" (hurricane season started last week and runs for 6 mos), I came across a can and decided to fix for the oldest boy in the family - DH.
I shredded the spam, sliced some onion, added some Walden Farms BBQ sauce and cooked 'till onions were soft. Put some "pulled Spam" in a Joseph's pita pocket and topped with coleslaw. DH loved it, and I didn't think it was too bad - I think the coleslaw and BBQ sauce helped distract me.
The spam had 6 carbs for the can, pita pocket = 2, BBQ = 0; coleslaw (recipe on FTS recipe board) = 1. We got 4 "Pulled Spam" sandwiches out of this for under 5 carbs. Certainly not a yummy Park Ave pulled pork sandwich, but it sure is lower in carbs!! (I've also thrown in shredded cheese, mayo and cream cheese and made a dip out of the spam.)
