Microwavable Pancakes

I've been using the One-Minute Muffin recipe to make not only muffins, but bread, buns, and pancakes. Sometimes I'll eliminate the egg yolk to cut down on carbs, so I'll add a little water to make up the difference in moisture. Well, it takes a LONG time to to cook the pancakes on the stove and a lot of times they turn out a little mushy because I don't cook them long enough. Today I tried something different ...

I made the OMM mix as usual (adding some cinnamon) and then sprayed a large microwavable plate with Pam. Then I spooned 4 good sized circles on the plate. I microwaved them for about a minute and a half. Turns out, they cooked WAY BETTER this way and weren't mushy like usual.

Just thought I'd share in case anyone else has the same problem. :)

I've been making these a lot more lately. Doing it this way is so much better. Not only is it faster, but they cook and taste better, too.
