Owensmaths Chicken Pot Pie! YUMMY

·   Cut up one cooked chicken breast. (I made extras of grilled chicken the night before so I’d have one to cut up. It has great flavor this way, much better than boiled.)
·   Add to the chicken one can of green beans, one can of low sodium cream of chicken soup (20 grams of carbs in the whole can – maybe use half a can and add sour cream or some heavy cream for more liquid), and some sea salt, pepper and garlic to taste.
·   Put chicken and green bean mixture in the bottom of an 8 x 8 in glass baking pan.
·   Put 3 eggs in a bowl and beat them.
·   Add to the eggs: 1 cup of almond meal, ½ tsp of cream of tartar, ½ tsp of baking powder, and ¼ cup of heavy cream.
·   Pour the eggs/almond meal mixture over the top of the chicken/green bean mixture.
·   Bake at 425 for about 30 minutes (until the crust is brown to your liking)

I'll have to go out and buy more cream of chicken soup.
Had a few cans in the pantry when I started FTS. But tossed them due to the carb content. :(

 Well it was very good but it has too many carbs for me  it was like 37-40 carbs and I got like 6 servings  so it was like 6-8 carbs for a pretty small serving .
 My hubby liked it but wanted a can of veg-all in it next time  ::) ::) He is not on FTS but he does like some of the meals I make . He ate like 4 of the servings and said well this is still a low carb meal for me  ???

Doesn't this just sound delicious :) When I was a kid growing up Mom made pot pies once or twice per week with leftovers from the fridge...can you say possum pie  :o :o  Just kiddin!  ;)

i made this today and it was pretty good. i used bertolis alfredo mushroom, put a can of string beans, and can of mushrooms and followed the rest of recipe. i guess what was just ok about it was the "crust "on top. maybe it was that it had no flavor, or the consistency was more like cornbread, but overall is was a good meal and i would make it again

Yes, I'll be brave - but I think the crust will be a different consistency than I would like, but like everything in life, you have to acquire a taste AND we know it is healthy for us, so .......  Okay, I still haven't tried this.  I think I will make a smaller portion and then bring it to work for lunches.  I know my husband will push it aside, as he makes his own bread (he is not an FTS guy) and he will make the comparison.  Maybe this weekend...  I like the idea of cooking the chicken in the oven first and giving it a nice herbal topping.  That will enhance the flavor in the pot pie.  I don't care for cooked beans or mushrooms, so I am going to have to improvise to my taste buds.  I'll keep you all posted.
