Western Family Cocoa

This brand is 0 carbs, too! Well, 2 carbs minus 2 fiber, according to the label. Just thought I'd mention it for those who can't find the other brand that TooSweet found. :)

No kidding! I made chocolate truffles today and topped them with pecans. I even put them in red, white, and blue mini-liners just to be patriotic! ;)

These are the chocolate truffles from one of the Atkins books. They're good, but I still haven't figured out how to keep the Xylitol from being gritty.

They look great Rena! :)

I use xylitol in the vast majority of recipes that call for a polyol (sugar alcohol) sweetener.
But in a few instances, the gritty crunchiness is a bit much.

Have you tried erythritol powder?
I buy it at: http://www26.netrition.com/sensato_erythritol.html

In recipes where the xylitol is gritty because it doesn't get hot enough to melt, I'll use erythritol.
However, in some recipes, the gritty texture adds a bit of character. ;)
What you do today is what matters!

It is easy.You have to heat it up to melt it.If you are not heating your chocolate melt the xylitol in hot water before you use it.Looks yummy! :)

Okay, I'll try that next time. Like I said, this was in an Atkins book I saw. It had you bring the cream to a boil, add the chocolate to melt it. Then remove from heat and add the Xylitol, butter, vanilla. So, the Xylitol never really had a chance to melt.

Not sure when I'll make these though. Whenever I have this crud in the house, all I want to do is eat it. I'll never get to my goal if I keep making 'goodies'. Maybe once I reach it ... I guess. Even the BB cookies are too tempting. :(
