Birthday!!!!
« on: July 08, 2011, 07:11:08 PM »
well, first let me say, I'm LOVING this diet, or way of eating.  I am down almost 14 pounds and LOVING IT.  I KNOW I will reach my goal, and I hope I do it before the wedding!!!!!  The OMG's i will get!!!!

Here's my issue.  My husband who is also on the diet ( down 16 pounds btw!!!!!!) , has a birthday on Monday!!!!!!  Any good/ EASY reipes for some kind of tiny birthday cake/edible?  I made a cheesecake recipe on youtube (from someone on adkins) that was my kind of easy, but not super yummy.  It's edible and LOOKS like cheesecake and kinda tastes like it, but, not fab.  SOooo.....any ideas on what I could make him???  Remember, the fewer ingredients the better lol!!!!!!

Almond Brownies from this forum are great!

Ingredients

    * 1/2 cup Butter or Margarine, melted
    * 1/2 cup Cocoa, unsweetened
    * 3/4-1 cup Xylitol
    * 2 Eggs
    * 1 tsp Vanilla
    * 1.5 Tb Corn Starch or  a little guar gum
    * 1/2 cup Almond Meal/Flour
    * 1/2 tsp Baking Powder
    * 1/4 tsp Sea Salt
    * 1/4 cup heavy cream

Directions
Preheat oven to 350F. Grease a 9-inch square pan; set aside. Combine the melted butter and cocoa, stirring to combine. Add sugar, eggs, cream, and vanilla and beat until smooth. Add the flours, cornstarch, baking powder and salt and mix to combine. Spread into the baking pan and bake about 20 minutes.

Hi Amber! :)

I threw out our Corn Starch when I started FTS.
It's VERY high in carbs.

I'll stick with the 0 carb Guar Gum! :)

replace the molasses with 1/2 cup sugarfree maple syrup.You can always reduce it on the stove if you need it thicker.If you want the bite of a gingersnap in this recipe add  a teaspoon or 2 of cayenne. ;)

Hi Marty! :)

I learned this the hard way too!... Most FTS baked goods cook faster than their high-carb counterparts.

Many ovens change as they get older. This is true of both gas and electric.
I believe this happens as their thermostats age.

It's a good idea to get an oven thermometer to see just how hot your oven really is.
I check ours a couple of times a year.
Lately, 350 is actually 365. So I lower the setting to compensate. Otherwise, I'll burn my cookies, too! :'(
What you do today is what matters!
