wow that does sound good . When I cook wings in the oven the grease popping makes my oven smoke does this not happen to yall ?
That has happened to me too, Jo.
It's the fat in the skins.
You could take Binky's advice and grill them.
Or, to minimize the smoke, lightly season them and put them on a cooling rack that's in a covered baking pan.
Pre-bake them for about 20-25 minutes at 400 until most of the fat has melted off.
Let them cool off and then coat them with sauce, cheese, etc..
Put them back in the oven (in another pan) at 400 uncovered for another 15-20 minutes until done.
BTW, save the rendered fat and keep it in the fridge.
Makes a nice substitute for bacon grease if you want a lighter flavor.
If you want to do this, season them AFTER the first round of baking.
P.S. Cook times may vary a bit as ovens don't all operate the same.
