Delicious Low Carb Walnut Bread

Walnut Bread
Ingredients

   1 ˝ cups unsalted butter
   75 drops FAT TO SKINNY Zero Sweetener
   6 eggs  
   2 teaspoons vanilla extract
   6 cups “NOW” brand unblanched almond flour (do not pack into cups, loosely pour)
   1 cup golden flax flour to firm up dough
   ˝ teaspoon salt
   4 teaspoons baking powder
   2 teaspoons baking soda
   1 cup chopped walnuts    

Makes 2 loaves

Directions

1.   Preheat oven to 350.
2.   Grease 2 loaf pans.
3.   In a large mixing bowl, cream the butter and sweetener.
4.   Add eggs one at a time while beating and beat until fluffy.
5.   Stir in the vanilla extracts.
6.   In a separate bowl mix the flour, walnuts, baking powder, baking soda and salt.
7.   Add the dry ingredients to the wet ingredients and mix well.
8.   Spoon into 2 loaf pans.
9.   Bake at 350 for 45 minutes.
10.   Cool in loaf pans on rack for 30 minutes the invert loaf pans to remove loaves
11.   Cool loaves on rack until completely cool then store in the fridge.

I made this bread and it was delicious,  ate too much of it.  I can't find the carb count anywhere on the recipe.  Can you post it to me?  Thank you.  Margot

Hi Margot  :)  The bakery book lists this as 36 net carbs for the entire recipe.  Of course you always want to check the items you are using for your recipes just in case the carb counts are a bit different than those originally used.

TooSweet is so right!!!
ALWAYS read the nutrition labels on the foods YOU use to calculate carbs!

For example, my local store carries heavy whipping cream that is 0 carbs.
But it also carries other brands that have carbs.

So depending which brand of what you use, will effect the carb count.
What you do today is what matters!

Thanks,   TooSweet and mouseissue,  nice of you to respond so quickly.  As I explained on a previous post ...I have celiac also and juggling that with low carb gets a bit frustrating at times.  So, good to know the carb count on that bread.  I just finished baking the Carrot Cake  I had to tweak it a bit as it turned out too oily and too soft ..... I reduced the oil to 1/2 c. And added more almond flour 1 c. -it turned out super.

Make sure when you make the carrot cake recipe you get as much moisture out of the zucchini as you can,it releases alot of water!I roll it and press it in 3 towels.It should not be wet it should be moist. ;)

The recipe makes 2 loaves and it is 18 carbs per loaf. We do carb counts for the entire recipe because everybodys idea of serving sizes is different.It is wicked good though!! ;D
