Kids are so funny ...

Tonight I was in the kitchen making Macafoney & Cheese for the first time ever. My nine-year-old was on his way downstairs, so I told him to tell his dad what I was making. Neil goes downstairs and says, "Daddy, Mommy told me to tell you she's making Macaphobia & Cheese." Rick starts laughing and has to come up to tell me. Then he adds, "That's what it should be called!"

We've been doing FTS since October 2010 and up until tonight we never tried the Macafoney & Cheese. It just sounded so ... so ... FREAKY! But we were never into soy or tofu before, so that's understandable. However, we both liked it a lot. Rick said he'd even eat it again, which surprised me.

MACAPHOBIA & CHEESE is a big hit at our house! ;D

I have yet to try this too...because of the tofu phobia!

Glad you liked the Macaphobia  :D, I love it and it's very good for you. Play with it by adding leftover chunked up chicken, ham, sausage, ground beef etc....

I like to spread it thin in he baking dish, about an inch and a half thick. That way I get a nice crunchy top.  ;)

I was worried how it would come out because I don't have individual baking dishes. Then when I got home I realized I'd only bought a half pound, so I ended up cutting the recipe in half. It turned out perfect. We're heading into town today, so I'm definitely buying stuff to make more. Like the mashed cauliflower, I could eat this one a lot. Rick too, which shocked me with his 'macaphobia" over tofu. But Doug is right about it not really having a taste until you cook something with it. I had mine with a side of 0 carb ham.
