Yummy breakfast
« on: July 23, 2011, 01:21:50 PM »
After being on FTS 10 months, I FINALLY tried the one minute muffin today...OMG!  Wow, now I totally understand what all the fuss is about!  I made mine with a little cinnamon & vanilla flavoring. Sliced it open & dropped it in the toaster.  Then topped it off with cream cheese.  Makes me want to jump back on the recipe exchange and try a bunch of other things!!   Found my new favorite breakfast!!!   ;D

Hey Jo.... have you tried making them in the oven?   They would be more like a regular muffin that way.  (I know not as quick though)  Also if you slice it thin and dip in egg you can make french toast....or just poor in a frying pan for pancakes  ;)  The outside tends to be moist and kinda mushy, but if you flip it out on a plate and put it back in the micro for a few seconds it might make it better..... I love these myself, but don't like them when they are soggy...LOL

Glad you tried them, Jan! I haven't made an actual 'muffin' in awhile. I use the same recipe to make pancakes and I cook those in the microwave now because they turn out so much better. I love the recipe because I use it for muffins, pancakes, buns, and bread.

Hi Rena! I didn't make mine like a "muffin" either.  I used a tupperware container because I wanted to slice it open and make it look more like toast. I have admired the pictures you and Amber have posted.  I should have tried this sooner!  I am anxious to try other flavors too!

I just found a microwavable omelet pan at a thriftstore today, so I'm going to try to make 2 slices of bread using that. Hopefully it will work. If not, I'm only out 29-cents. :D I guess if worse comes to worse, I can use it for omelets. HA!

make sure you add butter to your omelet if making it in the microwave so it won't dry out.The rule is one minute per egg. ;)

Thanks, Umpa. I used the pan today for bread and it worked great. I sprayed it with Pam and then divided the One Minute Muffin mix between them. Made 2 nice slices of bread, which I used to make a grilled ham & cheese. I've never tried cooking an omelet in the microwave. Might have to try that sometime.

I keep forgetting to buy banana extract. I'd like to try one with that and some walnuts.

This morning I used the OMM for pancakes and added raspberries. :)

We just modified the pink velvet to be banana cheesecake. It's firming up in there as I type. I'll let you know how it turns out in the morning.

You know we really should do a girls weekend and all meet up!
