Mexican food--refried beans
« on: July 26, 2011, 09:47:23 PM »
Hi umpa!
Would love to hear any ideas you may have about a sub for refried beans...I cannot think of any!
I had a taco salad today--beef, lettuce, tomato, sour cream, avocado, cheese, salsa--it was yummy, but I really missed my refrieds!
any ideas?
I live in tx and am surrounded by Mexican food!!!
Thanks!

I use black soybeans, which come in a can. I usually find them in the organic section of stores. The brand I buy is called Eden Foods Organic.

If you mash them up really well, they have a pretty close texture to refried. I like putting them in a low-carb tortilla with some cheese. One thing I really missed on FTS was bean burritos, so this is a close substitue.

This is going to sound very strange, but....

My replacement for a bean burrito is to take canned hot dog chilli (2 g net carbs per serving) and add it to a chopped up hot dog, shredded cheese, and onion. I put it in a low carb wrap and it's got the texture and similar taste of a bean burrito.

All good ideas!Heres mine ;)
For refried beans just take your soy beans(toosweet these are on sale at food lion for 99 cents  a can),drain them put them in the frying pan with 1/4 cup onion and cook them down until soft. You can also add alittle bacon grease.Take them out of the pan and cool.Put them in a food processor with a little cream and butter(omit butter if you use bacon grease.)And process until smooth

They were hard huh? Didn't cook them long enough? If you want them creamy you have to cook them down. ;)

You can Jo .You want them the consistency of kidney beans where you can mash them with a a fork.I make chili with them and nobody knows they are not kidney beans. And  of course when you make chili there are chili dogs the next day! :D

I went to our local store last night and could not find black soy beans. They should be with the beans, right?
Can you get them dry like pinto beans?
And if I claim to be a wise man. It surely means that I don't know... Kansas
