OMM Chocolate Cake

Tonight I made the One Minute Muffin recipe and added a few teaspoons of Walden Farms Chocolate Dip to the mix. I baked it in the microwave for 2 minutes. Note: I just used flaxmeal, but if you want more of a cake taste, I'm thinking almond flour would be even better. I didn't want the extra carbs tonight, so I made it this way. I guess you could use it with cocoa powder instead of the chocolate dip, but you'll need to add in the carbs for that. The kind of cocoa I have is Western Family and it's 0 carbs.



Frosting --
2 tablespoons heavy whipping cream
1 teaspoon sweetener (I used Xylitol because I'm out of Truvia)
2 teaspoons unsweetened cocoa powder

Whisk everything together until smooth and creamy. Then frost on a cooled One Minute Muffin. Mmm, mmm, mmm!

Hahaha -- yeah, I guess we won't be throwing chocolate cakes at any men during that time. That's what the brancrisps are for. :D :D

I really want to try some of Umpa's cakes in the bakery book, but I am SOOOO tempted to eat more than I should, so this little one works perfect for me because it's only one serving.

Beautiful cake!  I may have this for lunch.  Flax is so good for you and I have an extra carton of heavy cream that is going to go bad soon.  Anyone have suggestions on what to do with it? I was thinking of whipping it up, adding some wf syrup and freezing.....maybe like "ice cream".

Wow Rena!... That really looks decadent!

I'm going to try 50-50 with flax meal and almond meal with hopes to to give it a lighter more "cakelike" texture.

Tony -- Let me know how that is. I have almond flour also, but mine isn't as low as the NOW brand, so I don't use it that much. I also don't like the taste too much, so maybe 50-50 would be a good option. I also have soy flour, so I'm wondering how that would be.

I just like the single serving part. I can't be trusted with a whole cake.  :D  :D

Looks great Rena.  I use the NOW Almond flour for the OMM (not a big fan of Flax)  I know what you mean about the single serving!  :)

Very cool Rena :) I know what you mean about single servings.I buy the mini tart,mini bundnt cake,and mini cheesecake pans and use those the most.Beth Ice Cream! :D

Rena, dear friend! Could you tell me the recipe you used for the OMM when you converted for this cake...I can't find the original and I'm wondering what I could use in place of heavy whipping cream that would be vegan? Maybe the marshmallow creme by walden farms? Also, where did you find that brand of cocoa, I've never heard of it! Bless you Rena...I've been back on for 2 days now...wish me blessings :P

TabyandZayBaby congrats on the 86 pounds that is so great! :) Whipping cream is for moisture so you could use a vegan mayo ;)
