Tony,  how does taking fresh fruit and using a dehydrator to dry them affect the carbs?  Just a thought, was wondering.

The water in fruit has weight and volume.

Removing the water makes for more berries per ounce in weight and in volume.
And, therefore, more berries and more carbs per ounce by weight and volume.

Compare a grape to a raisin and it becomes clear.

So, if we figure out the number of carbs in 1 cup of fresh blueberries and then dehydrate them, will the carbs be the same?  I mean, carbs don't just GROW, do they?

Carbs don't grow by dehydration.
A cup of raisins has more carbs than a cup of grapes.
Of course, it takes a lot more grapes than 1 cup to end up with a cup of raisins.
That's why there are more carbs in the 1 cup of dehydrated grapes (i.e. raisins).

Try them fresh  in chocolate before you dehydrate them  ;)
