Umpa this is a favorite soup recipe that I found.  I'm not sure if it's possible to convert this or not.  Anyway here is the ingredient list.

TACO SOUP

Ingredients:

1 pound ground beef
1 onion, chopped
1 package ranch-style dressing mix
1 package taco seasoning mix
1 cup water *
2 14-ounce cans diced tomatoes with green chilies *
2 15-ounce cans pinto beans
1 15-ounce can black beans
1 15-ounce can cream style corn

Brown beef with onions in a medium size soup pot (modified recipe by adding a touch of garlic and black pepper to meat also).  Drain excess grease.  Add remaining ingredients and simmer for 20 minutes before serving.

May be served with tortilla chips or cornbread, sour cream, shredded cheese and salsas.

*The recipe was modified by increasing water to 2 cups and using diced tomatoes with onions (not green chilies)

Taken from Hometown Recipes in American Profile magazine of Hartsville, South Carolina paper.  Submitted by Ruth Hull of Allardt, Tennessee.  Tips from the test kitchen:  This quick and flavorful soup is good with ¼ cup fresh chopped cilantro (did not use).  This soup freezes well.  It can be made ahead of time and frozen in individual containers to be used in the microwave later.

Gosh, Umpa, I was afraid you would ask that LOL.  ::)  I know it makes a lot.  It's been a while since I made it BUT when we served it we put 2 ladles (1 cup) per bowl.  Guessing it makes 10-12 servings more or less.  Thanks!!

TACO SOUP **Since its just you and hubby lets cut this in half that will take you down to 6 servings

Ingredients:

1 pound ground beef *1/2 pound ground beef
1 onion, chopped *1/2 cup onion
1 package ranch-style dressing mix* 2 tablespoons is 2 carbs
1 package taco seasoning mix *replace this with 1/2 teaspoon cumin,1/2 teaspoon garlic powder, 1 teaspoon chili powder, 1/2 teaspoon oregano
1 cup water ** 1  cup
2 14-ounce cans diced tomatoes with green chilies * 1 large fresh tomato diced ,chilis are 6 carbs per half a cup, one chopped jalepeno would be a better choice
2 15-ounce cans pinto beans omit
1 15-ounce can black beans one 15 oz can black soy beans put these in when you cook ground beef so they have time to soften up.They are .99 cents at the food lion.
1 15-ounce can cream style corn omit

I don't know why? Its under three carbs per serving.Black soy beans are extremely filling.They will hold you for a long time.Bet hubby can't eat more than a cup.If he does eat more than a cup the first time he won't the second time because he will feel stuffed!Unbutton your pants stuffed! ;)

The weather is still too warm around here for hot soups.
But Fall is just around the corner. And this dish will be on the menu! 8)

Yummmm  I'm glad to see this!!!  I've had the original version and it is so good.... This will be wonderful when the wind is blowing this fall and winter  ;) ;)

I think I am gonna ry this without the ranch dressing ,Do you think it would still be tasty ? It would cut down the carbs  ;D

Its 2 carbs for 2 tablespoons.Heavy cream would give you the same consistency just not that ranch zing ;)
