We're ready to cook

TwoSweet and SuzLyn spent the morning cooking Thursday, August 25th.  Made Doug's famous Italian Stuffed Zucchini.  When it was done started the Coconut Cake....modified by TwoSweet (her story and pics will follow).  After the cake was done it was time to cook 2 london broil roasts (packaged and froze today for future meals).  Smelling all this good food made us hungry.  Check later for what we had for lunch!

Lunch was leftovers from SuzLyn's dinner the night before

1/2 cup LaChoy Stir Fry Vegetables 1 net carb
3 oz chicken cooked with garlic powder, onion powder and soy sauce
1/4 Lavish bread cut into strips (wonton noodles  :o) and browned in the toaster oven 2 net carbs
Heinz Classic Chicken gravy (jar 1/4 cup = 3 carbs) only used 2/3 that amount 2 net carbs

(Note:  after cooking the chicken in soy sauce and taking it out to cut it up I dumped the vegetables in the soy sauce to add a little more flavor to them)

We split this so we only had 2.5 carbs each for lunch ....   YUMMY!

TwoSweet.....where's that cake LOL?   :D  PS  Your daddy thought it was good!  First thing I heard after dinner was "we've got cake??, I'm ready"

It was a fun day that is for sure!!  LOL  After all that cooking we had a good time working that yummy lunch off in the pool...LOL  Water aerobics \ ;D/  / :D\ \ 8)/   Any hoo the zucchini was very good.  Hubs didn't like as much zucchini but really liked the rest....LOL  We enjoyed that with a small side salad.  The cake was very good as well...........It just wasn't what I had pictured in my head (if that makes since)  We made Umpa's coconut cake that is on page 139 in the bakery book.  My idea was to make a Jello poke cake out of it.  When it was done baking I poked holes in it and dissolved sf lime jello in 1 cup of hot water and poored over it.  ( I realized while pooring that the holes were probably not needed..LOL)  After I poored it evenly we chilled it in the refrigerater.  It was very good with 0 carb land o lakes whipped topping.  I might try it with a different recipe next time though.  I probably don't need to have to many baked goods around  ;) ;)      I'm ready for another cooking day!!! 8)

Shawn, daddy wanted that jello cake for dessert again last night LOL.  I said sorry....I froze it so we wouldn't eat too much at a time.  Mouseissue, we love to cook.  We'll let you know next time we have a cooking day LOL!

Gainesville can't be THAT far away??  Bring a cooler, spend the night, enjoy the pool and take food home too LOL.

Doug and Umpa we do love to cook.  Something else we plan to take advantage of is buying stuff online, sharing and splitting the cost!!  We have started our "wish list" LOL.

Jen we are originally from KS...used to be neighbors LOL.  We still have family there.  Takes about 2 days drive LOL, we would need to plan ahead  ;)
