I tried making the cookies for this yesterday and failed!Will try this again today Jo ;) Sorry it is taking so long I am sick as a dog from the airplane. :)

Thanks Rosie :) I can't taste anything so its messing up my cooking! i made a fudge sauce that was so sweet you couldn't get it past your nose let alone lips! I got the pudding part of this recipe its the crunchy cookies that are messing me up.I will figure it out though. :D

If you can't taste anything right now, you might want to hold off doing any "experimental" cooking until you can.

Hey umpa I was thinking   ::) but you know how you layer the cookies in the banana & the pudding ? What if we make the nut pie crust and then just put the pudding on top I guess it would be more like a banana pie but maybe the same type of textures . I always like the bananas and the pudding more then the cookies because the cookies get mushy after a day or  two .

I think your answer is going to be single serving dishes.The pie crust made from goldenflax will stand up for a week(don't know about longer cause it never last that long).The nut ones are only good for 4 or so days before they get mushy.But the vanilla wafers you found that were a little higher in carbs would be fine if you only used a few in a single serving dish.I am working on oreos today and tomorrow but if you want my help with this i can do it next ;)

If the bottom gets mushy, leave it off the bottom and put it on top when you're ready to eat it. Just make the crust or cookies and then put it aside until the last minute - call it upside down pudding.

Oh  Umpa I thought you had gotten it all but the cookie part before you got sick a while back . If you give me the recipe for the pudding part is it just SF vanilla pudding with Banana flavoring ?  I know you said you tried the cookies once and it was a fail .

I don't buy sugarfree pudding,too high in carbs. .I use heavy whipping cream fully whipped and add my xylitol and flavorings to it.The vanilla wafers were the problem.I am making oreos today (had to refridgerate the cookie dough overnight.) its a crisp cookie.This recipe may work for vanilla wafers.Its keeping the cookies crisp in fridge after you make the pudding .Thats why I suggested single servings. ;)

Oh ok single servings would be fine so when ever you get to it yes the vanilla wafer cookies are like 2.5 carbs per cookie . this might not be able to make low carb enough to be worth it . >:(
