 Hi Umpa I am looking for a good low carb pesto sauce or to make my own.
                           
                    This may be another dumb question. I love pesto more than candy.  ::)

Hi Phil! :)

Pesto is really easy to make.
It's basically crushed basil leaves and crushed garlic in extra virgin olive oil with some salt and pepper.

Simply crush the basil and garlic. Using a food processor makes this easy.
Slowly add olive oil while mixing in until you get a nice sauce consistency.
Add some sea salt and fresh ground pepper to taste.

Put the concoction in a glass container and allow it to sit in the frig at least overnight.
Give it a stir before using.
Doing this will help the basil and garlic blend thru the olive oil for a better pesto.

I did not mention how much garlic.
This was on purpose as everyone has a different tolerance for it.
Experiment with amounts to find what you like best! ;)

                    Carb count is not that high is it? I was looking at some in the store last night. Very high  ???

Make your own Phil, substitute the fresh garlic for garlic powder if you want to reduce the carbs further. Fresh garlic is 1 carb per clove, garlic powder is intensified so you'll need much less for the garlicky flavor  ;)

What makes the carb count high in the store bought one is pine nuts.If you want nuts in your pesto use walnuts.Cilantro also makes a great pesto. ;)
