I took my chippies I made and melted cheese on them and crumbled up some bacon then added a little ranch dressing. hehe was really good.
There's a place in Kentucky called Jillians and they serve their chippies that way is so good!

I did the jicama chips for breakfast this morning.....fried them in the bacon grease....seems like it took long....
patted them real good and sprinkled cajun and a couple shakes of 'Mrs. Dash' minced onion...
I sliced them pretty large but thin and used them sorta like a tortilla cuz they were still 'tenderish' and put
the piece of bacon and a bit of the eggs and a sprinkle of mozzarella...yummy yums!!  :D

Ah, jicama! I love it in Mongolian Bbq stirfry (which I don't eat anymore because of the noodles...hmmm, rethinking - stirfry without the noodles! Duh!) A few years ago I was in Mexico with a Mexican friend and from a street vendor we got a large plastic cup with jicama sticks mixed with watermelon and cucumber sticks, seasoned with lime, chili and salt. That's what the Mexicans used to cool off on a hot day instead of snowcones. It was a fun combination of flavors and textures.

It was very tasty - this Mexican friend had me try all sorts of strange food while I was there. It was fun. I don't know what the sugar count is in watermelon, but even just jicama and cucumbers would be refreshing.

Watermelon has always been one of my favorite summer treats.  Since, God willing, I'll be at goal by summer, I'm wondering if the sugar content will be too high for my sugar-free system.  It's funny that last year, the thought of a watermelon-free summer was really hard to take.  Now, a few melon balls in with my berries sounds great.

I almost don't know myself.

:D i always tell people Andrea if you are craving something spend part of your daily carb intake on it.Either your body needs it or you just think you want it.Usually its a false craving, like french fries, and you go that taste like crap why did I eat that??  :D
