Sausage Balls!

Sausage balls are one of my favorite guilty pleasures...especially around the holidays!  Here is what I did to make them lower carb.  They are soooooo yummy!!!



1 block Cracker Barrel Extra Sharp Cheddar
1 Chub breakfast sausage ( I use mild, but spicy is good too!)
1 Cup Almond Flour
1 3/4 Cup Flax Flour


Preheat over to 350

Over low/medium heat melt cheese, then turn off heat, and add sausage.  Mix well.
Pour sausage/cheese mix into large mixing bowl, add almond and flax flour slowly while combining. I usually have to use my hands to make it mix well.
Roll pieces of dough into little balls, and place on parchment lined baking sheet.  Don't worry of they are almost touching, the dough doesn't rise much in the oven.
Bake about 25 minutes.

Careful pulling them out of the oven, the tray will be super greasy.  
Serve hot or at room temp.  THey are still tasty reheated in the microwave!

BTW, Jess... What is a "Chub" of breakfast sausage?

Hi guys  I'm sure Jess will answer this as well, but a chub is a thin plastic package containing ground meat, such as sausage or hamburger, with ends fastened together with a metal clasp.  I'm assuming she is using a 1 lb chub in this recipe, but you know what they say about assuming....LOL  :o  

I added a picture of chicken sausage to give you a visual   ;D ;D

Planning to make these this weekend, but I plan to use Carbquik instead of the flex and almond flours. Carbquick is just like Bisquick, can be used in the same ways.  I got my box from Netrition.

I don't know marty.I have never tried to make them.My sister got them from a wonderful Spanish lady in San Antonio. :) I am willing to try though. ;)

I think so ,masa and golden flax have the same consistency.The masa isn't as important to me as the filling I love the spices in the filling.I will send my sister a email and see if we can get the recipe.A problem with alot of recipes on the internet is you don't know if they will cook. ;)

The last batch of sausage balls i made I didn't use any flour (because i didn't have any)just cheddar and sausage.I made them 1 inch by one inch.They were good.
