Tamales!

OK, Umpa, here's the Tamale recipe:

4 cups of masa flour,
2 tsp salt,
1 tablespoon cumin,
1 tsp chili powder,
1.5 cups of lard. 

I mix all this like pie dough, cut the lard in the flour.  Then add 2 to 4 cups warm meat broth.  Add more for the consistancy you need to spread on corn husks.

Tamale Filling:
 1 1/4 pounds pork loin, cooked and shredded
 1 large onion, halved
 1 clove garlic
 4 dried red chile pods
 2 cups water
 1 1/2 teaspoons salt

The Tamales that I get from Mexico have potatoes, jalapeņos and green olives, and sometimes cactus in them. Also, they use shredded beef instead of pork.

Just for interest, the Mexicans only eat Tamales for special occasions - my Mexican friend said that they are too fattening to eat very often.

hey I've missed ya'll too..... I've stalled and lost and then stalled again lol my numbers have gone up slightly but measurements are going down lol thanks to a new gym membership... & personal trainer! my fat numbers are going down but I had 1/4 in gains in my arms in a week its hard but it works I've got more people online with the FTS lifestyle on lady at work has lost 17lbs in her first month alone... very proud of her!!

I know EXACTLY what you're going through.

I've been going through the slow start & stop progress for many months. That's why I'm a Turtle Club member.
Maybe our metabolisms work in similar ways.

I too have been physically active working (sometimes very hard) around our property.
And although the scale doesn't show it, I've been shrinking.
I sure have enjoyed feeling so good and being so much healthier! ;D ;D ;D

And kudos to you for spreading the word about FTS! :) :) :)
God will bless you for encouraging your coworkers to start FTS.

I think you can make tomalles with flax meal. Just substitute for the corn flour

Our tamale pot hasn't been off the shelf in years! I think you could make the original recipe with half flax and half almond meal. I'll try that. I really don't think the corn masa adds a whole lot of flavor. I think the texture is the important part.
