This recipe was given to me by a friend at work who has been following FTS plan for a few weeks and doing great.  It is simple, inexpensive and will make a great holiday treat (I had it for breakfast!)! It is on the Knox gelatin box!
I added sugar free strawberry flavor to this one.  I have ordered some pumpkin flavoring to try for Thanksgiving!


Cheesecake1 envelop unflavored Knox gelatin
1/2 cup xylitol
1 cup boiling water
2 pkg 8 oz each cream cheese ( I used Philly 1/3 less fat neufchatel cheese)
1 tsp vanilla
Optional - strawberry syrup/flavoring or your flavor of choice

In large bowl mix gelatin with xylitol. add water & stir while gelatin dissolves. With mixer, beat cream cheese and vanilla until smooth.  Pour into crust chill until firm (about 3 hours).

crust- almond flour & butter or Dixie Diner graham cracker crust!

Thanks Amber!  This sounds really good!  Also, I love it that you don't have to bake it for an hour!  I will have to try this.   ;)

i did this recipe for the new cookbook except I add Jello(sugarfree) to it and one cup hot water and put in the fridge.The flavors are limitless! ;)

Hey Umpa, when you use the flavored sugarfree jello, do you use the whole small sized box?  Do you also leave out the xylitol?

Recipe from new cookbook in January

Fruit (optional)
Put cream  cheese  in bowl .
Add entire box jello.
Add one cup hot water.Beat with a mixer.
Add one cup cold water.Beat well until there are no clumps of cream cheese.
Pour into mini cheesecake pans(available at Walmart)
Refrigerate until firm about 2 hours.
**If you want to use fruit put it in the cheesecake pan before you pour in cheesecake batter*
This is a great recipes for kids!There are lots of flavors of sugarfree jello! ;)

The lemon jello or the lime are my favorites,reminds me of keylime pie . ;)

Making this tonight to carry to my office Thanksgiving luncheon tomorrow!!  I think I'll use the lemon for the first try.  ;)

The only carbs are in the cream cheese and fruit .Jello is a zero,not the jello puddings though.I like the 1/3 less fat philadelphia cream cheese.It stands up well in kitchen and is 4 carbs per 8 ounce block.To make a baked cheesecake you have to cut it with real cream cheese. ;) The kids love this jello cheesecake zombiegirl ;)

Keep looking, Kelli! There are easy and delicious recipes all over this forum! :D My favorite is the Macafoney and Cheese - in the cookbook and on dthe main website as a video. ;)
