Happy Turkey Day!!
« on: November 24, 2011, 12:21:33 PM »
It's funny, some friends of ours, we have been trying to get on board with this lifestyle, but they won't budge, I sent her an email yesterday wishing her a happy turkey day, and she was like enjoy your carb free Thanksgiving, LOL...You know, people think what we do is funny. I am eating less and less and eating well under 20 carbs and we are looseing the weight! I am already down to 202! Finally got off the 204 mark! Aint no way I'm letting any carbs get the best of me!!

Hi Stephanie! :)

Just remember that when "people think what we do is funny", as we approach our goals, we'll be smiling as we shop the "skinny people's" section of the stores.

And... Hooray on your continued weight loss! :) :) :)
What you do today is what matters!

Happy Turkey Day to you as well  ;D  Sam and I had an awesome low carb dinner.  Turkey, dressing (made with the low carb muffin mix), cheesy cauliflower and deviled eggs.  Made a carrot cake for dessert.  Very pleased with what we had to eat.  I don't feel as if I missed out on anything  8) 8) 8) 8)

Congrats on the weight loss, Snobles.  Keep it up!  You are doing GREAT!!!!!

Thanks guys! It's been a long road from where we were at! And I'm not letting anything ruin it in a day!

Binky, how did your dressing turn out?  I have thought about buying the mix and making some for Christmas.  I have read a few reviews that say the muffins/cornbread are eggy tasting.  :'(
Thanks!

We had a good Thanksgiving dinner - didn't care much for the dressing though.  I'll have to experiment with that before I serve it again.  My friends are all regular food eaters and they liked everything on my low-carb menu (except the dressing) Umpa's crustless pumpkin pie was a real hit!  :)

Jess, the dressing was awesome!  The muffin mix makes 12 muffins and you can freeze what you don't use.  Here's my recipe:

2 muffins
3 stalks of diced celery
1/4 cup of diced onion
1 1/2 of cooked chicken - I cooked a small whole chicken
3 boiled eggs - diced
sage - about 1 1/2 teaspoons
salt - 1/2 teaspoon
Chicken broth from the cooked chicken - I didn't measure the broth - I just put in enough to make it moist

I cooked the celery/onions in some chicken broth before adding to the dressing. I baked the dressing for about 20 minutes and it was really good!

WELL!  Honey let me tell you!  That was one drawn out virus. Yuck.  Kept getting sick, then going low, needing Sprite, less insulin....blah blah blah.  I'm sure you know the routine! :-\
Howsomever! ;D I am PEACHY KEEN now and camping out on the couch...I gave it to my hubs.  We share everything. :-X
Back to the kitchen soon...lol I can't do too much now, the smell of food gets to my hubs, poor fella!
Thanks Umpa!  :D
