Here's a recipe I just stumbled upon as I've been going through my deceased sister's recipe collection.
I made this last night and my wife and I thought it was wonderful.
The entire recipe has about 3 net carb grams from the vinegar.
Ingredients:
4 Pork Chops about 3/4" thick (I used boneless loin chops)
1 TBSP Butter
1/4 Cup SF Raspberry Jam (I used 50-50 brand)
2 TBSP Dijon Mustard
1 TBSP Balsamic (or Raspberry) Vinegar
1/4 TSP Ground Thyme
1/4 TSP Orange Extract
Season Salt
Directions:
Melt butter in large skillet over medium-high heat.
Add chops to skillet and lightly sprinkle on some season salt (I used Lowry's brand).
Cook chops for 8 minutes per side (turning once).
Make glaze by combining all remaining ingredients into a small pan and simmer for about 5-6 minutes, stirring constantly.
Spoon glaze over chops and serve immediately.
We accompanied the dish with Cauliflower in Cheese Sauce and a velvety Merlot... It was a heavenly experience!
