Low Carb Sugar Cookies by Jo

Sugar cookies

1 1/4 cup Now Almond Flour    5 carbs
3/4-1 cup xylitol      0 carbs (taste batter after 3/4 to see if you need more )
1/4 cup butter         0 carbs
1 egg                     .5 carbs
1teaspoon vanilla     0 carbs

Preheat oven to 350 line baking sheets with parchment paper enough for 20-24 cookies . In a bowl mix AF & xylitol together , another bowl mix very soft butter ,egg & vanilla then blend with flour & sweetner .
 Roll into balls and press down with fork .
 Bake 5-8 minuites or until brown around edges .
Let cool on pan for about 5 minuites then move to wire rack of plate , they are good but a little soft in the center at first .But a couple days in the fridge and they are just like crisp sugar cookies  Grin
And at 5.5 carbs for 20-24 cookies you do the math almost  0 carbs  Grin enjoy !!

Also just a side note I split the recipe in half to try and the batter was not thick enough to roll into a ball so I just spoon a Tablespoon for each cookie and it worked out fine

Umpa said something about using soy flour to make things you have to roll out. I was going to try that, but not sure how well it would taste over the almond flour.

I imagine if you replace the vanilla extract with almond and put a blanched almond half on each cookie,
you'd have almond cookies!

Rena you dont have to roll this dough I made half the recipe and it was not thick enough to roll a ball and then push down with a fork like you do the PB cookies . So I just spooned out each cookie on the sheet pan . They were pretty good .

And Yes Tony I guess that would be !!!

Here is what I came up with.  These cookies were great Jo...thank you so much for the recipe  :D

I doubled the batch and put them in my cookie press.  (Yall know how I like gadgets  ;D)  So for about 10 net carbs I had about 80 of these little Christmas tree cookies....How cute is that ...LOL  I tried different toppings to see how they would come out.  I made some green xylitol to sprinkle on top and thought I would try the color in the dough itself (not all that pretty).  I think my favorite was that I had some crushed sugar free peppermint candy left from making Rena's chocolate recipe  http://www.fattoskinny.net/index.php?topic=3744.0  These where also very good!!   So I thought what the heck..... I was surprised at how tasty they were  ;D ;D  I say "were" because there are none of those left....Hee hee  ::) This was a wonderful treat for my holiday table ;D ;D

PS.  Santa and I are a bit tired...LOL  Night all  ;)

Why is it I always see these recipes when I'm out of the main ingredient?

No almond flour. :( All I have right now is flax and soy.  ::)

These turned out okay. I don't know. I guess maybe I just don't like almond flour that much. Maybe next time I'll add some cocoa powder to liven them up a bit.

I agree. Mine turned out a little flat and sticky. Would it help to add baking powder? If so, how much? Also, mine are way too sweet. That's usually not a problem for me, but I've found almond flour is already kind of sweet. How much could I reduce the sweetener without screwing up the dry ingredients for the recipe?

Rena mine were sticky too they got a lot better after they were in the fridge for a day or two. Did you put 3/4 or 1 cup ? I would think that you could go down to 1/2 cup if 3/4 cup was too sweet
