zucchini casserole

This is my mom's recipe. She is a member on here, but has never posted (dsgates).

2 zucchini sliced thin.
3 beaten eggs.
3 cloves of garlic (# accord. to taste).
1 tsp. olive oil.
1/2 c chopped onion.
1 tsp. Italian herbs. salt & pepper. chopped parsley.
1 cup Italian cheese (mozzarella, parmesan, provolone).

Saute onion in olive oil about to 2 min. Then add minced garlic...cook 30 to 60 sec. more till smell garlic. Cool slightly-- slowly add to beaten egg so it doesn't cook eggs. Add spices and parsley. Layer thinly zucchini with mixture then cheese. DO put cheese on the top layer. Cook 20 minutes at 400 degrees. Then add more cheese to top with temp. on 375 degrees for another 20 minutes.

This sounds like a lasagna recipe, less the pasta and add some meat.
And if I claim to be a wise man. It surely means that I don't know... Kansas

Lasagna noodles can be made with eggplant or zucchini Phil.I use a mandolin so i slice them paperthin.If you dont have one score the eggplant/zucchini.
