Chocolate Covered Cherries

Today is NATIONAL CHOCOLATE COVERED CHERRY DAY! Is there any chance of making these sugar-free or low-carb? The maraschino cherries are probably too high, but a regular cherry is about 1 carb, right? Could you pit one and make it yourself? What do you think, Umpa? Here's a recipe I found online ...

Chocolate Covered Cherries

60 maraschino cherries
3 tablespoons butter, softened
3 tablespoons light corn syrup
1/4 teaspoon salt
2 cups powdered sugar, sifted
1 1/2 pounds chocolate, in pieces

Drain cherries thoroughly on paper towels. Combine butter, corn syrup, and salt. Stir in powdered sugar and knead mixture until smooth (chill if too soft).

Shape 1 tsp. of mixture around each cherry. Place on baking sheet lined with waxed paper. Chill.

In saucepan melt chocolate over low heat, stirring constantly. Dip coated cherries in chocolate and place back on waxed paper to set. Chill.

Store in refrigerator in an airtight container. For best results allow chocolate covered cherries to ripen in refrigerator for a week or two before serving.

In the Bakery the strawberry dip would also work for cherries.I don't understand the sugar and corn syrup mixture around the cherry before it goes in the chocolate though.Sounds like sugar coma! :D

Umpa it is a sugar coma when you bite into a chocolate covered cherry it has a clear sryup around the cherry . I was thinking what you said the chocloate dipped cherry . would give you the same taste . Man I use to could eat those things I bet I would not be able to hold one down now . BLAH

Thats right! Like a white syrup?I think just the cherries dipped in chocolate would do it.Cherries are high carb though, i'd just eat a couple at a time ;)

Chocolate covered cherries are "Carb Bombs".
They are to our metabolisms what M80 fireworks are to our fingers... Neither one will do us any favors!

I have a friend who sends me Trader Joe's chocolate liqueur cherries for Christmas. She didn't do it this year, which is good because I still have the two boxes she sent last year. These are way different than the gooey ones you find in regular stores.

Fruitcakes make good doorstops and tire chocks until they rot.
Just don't heave one at anybody!... They could be lethal! :D :D :D :D :D

Rena, that chocolate candy won't keep. The chocolate will turn white and taste rancid. You need to give it away or it will go to waste! I had friends who gave me fancy candy every year and when I started trying to [url=http://www.fattoskinny.com/]lose weight[/url], I didn't open it - when I finally did, it had spoiled! I felt really bad, because I hate to waste things!

Oh, I know -- I have no intention of opening them now. I just keep forgetting to toss them out.

I do too. There's bad fruitcake and then there's good fruitcake, which most people never try.
