Does anyone use ... Erythritol ??
« on: January 17, 2012, 12:57:09 PM »
Greetings again.

Found this sugar replacement and they admit it's only 70% as sweet as sugar, which is good.

Erythritol - 1lb Bag - Non GMO

Feedback is welcomed and appreciated.

Ive never used it.. My experience is with

splenda- aftertaste
Truvia/stevia-after taste
malitol-taste good but oh boy, it gives a bad case of gas
xylitol- my favorite.. no aftertaste and texture is just like sugar..

Hi Vajrayana

It seems to me that it behaves the same as xylitol.  Some folks say it doesn't cause the tummy issues that the xylitol causes for them.  Every one is different though with the sweeteners.  One will bother some and not others.....

Thanks.

I'm mainly seeking feedback on "aftertaste".  I have been very blessed with extraordinarily good health lifelong and making the adjustment is about taste and adjusting far more than worries about gas or my stomach.  (smile)

I guess that is what I was trying to say...LOL  The xylitol has no after taste nor does the Erythritol to me.  They both have a cooling effect when it melts on your tongue.  I'm thinking xylitol may be sweeter though.  :)

I have not tried it.When I was writing the Bakery Book the only sweeteners that preformed consistently were stevia and xylitol.Stevia granulated for hot drinks.i only bake with xylitol.Flours can get expensive if you make alot of mistakes ;) When making the recipes in The Bakery Book its very important to follow the steps exactly until you get a understanding, then you can improvise.Remember xylitol is a lot sweeter than sugar so its not a cup per cup replacement its about 1/2. If I can help you any further please ask :)

Hi Vajrayana! :)

I have found it has no bad aftertaste and use it occasionally as a replacement for confectioners' (powdered) sugar.

It's not as sweet as xylitol but does lend a nice "presentation" when making FTS-friendly things that "appear" to be coated in powdered sugar.

It is a smaller molecule and that's why it isn't as sweet and, for some, gentler on the digestive tract.
