Spicy Chicken Drum Stix

OK so I can replace my flour in a recipe I'm looking at for the pork rinds but it also calls for corn meal .

any suggestions?
or maybe just leave it out all together ?

It's for a chicken coating

milled flax seed is great mixed with other flours on chicken

I use crushed pork rinds and parm cheese for my chicken coating..YUMMY!!

Spicy Chicken Drum Stix

8 Chicken drumsticks ( I'll use skinless)
12 oz bottle franks hot sauce
1/4 cup Cornmeal
1/4 cup Flour
1/2 tsp. Salt

 doesn't it sound YUMMY !  and i love love love franks hot sauce

11.5g
3 tsp sugar
Cornmeal
(1 Tbsp)
10.6g
2 ½ tsp sugar
That's more than 20 carbs for the whole day on some chicken drumsticks.

Is the coating necessary?If it is mix soy flour 50/50 with ground pork rinds.When doug makes hooters chicken wings he uses tabasco and butter and no coating.

GUess what ! NO CARBS no SUGAR ! I'm surprised it has no sugar.

UMPA:

there is a light coating
  the directions ( forgive me for not posting above)

Divide drum stix and hot sauce between 2 zip lock bags. refrigerate for at least 8 hours.

Pre heat over to 350

Line large rimmed baking dish with foil.
coat with cooking spray.
In a large bowl,combine cornmeal,flour and salt. 'Remove stix from bags and shake off the excess sauce (disguard sauce).
Dredge stix in cornmeal mixture and place on baking sheet. Bake 40-45 minutes turning twice.

SERVING 2 stix

295 cals
13 fat
118 choles
1 fiber
30 protien
13 carb

I think the 50/50 soy flour and pork rinds will work just fine Leese.If you want the  cornmeal the only cornmeal i have ever found that is truly low sugar is dixie diner corn muffin mix.You can use that right out of the bag like cornmeal.If you get on his email list bob will send you his wekly specials like free shipping 25 % off,etc.Try experimenting alittle you may find something you like.Let me know how it turns out my friend.
