Tofu who knew?

I just had the tofu spagetti with low carb tomatoe sauce and it was so good. Who knew?

Haha -- I felt the same way when I made the Macfoney & Cheese! :)

When I first read Doug's book, I gagged at the thought of a tofu mac & cheese or a soynut butter cookie. Now both of those things are my favorites. I guess it's really true when they say, "Don't knock it til you try it!"

It's important to mix up your protein sources and Tofu is a great addition to your intake.  8)

I have never tried tofu before, but maybe this is the week to give it a shot, another thing I am a bit nervous about  :)  I remember how nervous I was last Sunday when I started the FTS ;D ;D

We had a dinner party last night and served Korean Ribs, Wasabi Cole Slaw and Macfoney and Cheese. EVERYONE went back for seconds of macfoney and cheese. When I announced at the end of the meal what it was made from Jaws dropped.....

Tried the Macaphony & Cheese tonight can't say husband and I are fans ???  However, I will try it again, sometimes the more you try the better it gets.

I've used it in 'stroganoff' and 'lasagna' and chicken 'noodle' soup. I haven't tried tofu 'pasta' salad yet, but I see that in my future. So far the only tricky one was the lasagna - you have to watch the liquid because tofu doesn't absorb like noodles.

Sarah, now that I've tried the tofu mac & cheese, I was just wondering if I could slice the tofu up really thin and make lasagna noodles.  I searched the fts site for "tofu" & found this thread!  ;)   Do you have a recipe you went by or did you just kind of wing it?
