I start out with a recipe and then I don't have everything or don't like one of the ingredients or think something else would work better - so I end up winging it! It's been a while since I made the lasagna, but it seems like i pretty much followed the recipe but cut out most of the liquid. I always thought I hated tofu until Doug re-introduced me to it!

Me too Sarah!  Prior to fts, I used to pick out all the little cubes of tofu from my hot & sour soup!  ha ha  However, after watching Doug's cooking show video, it just doesn't seem so scary anymore.  :D   I brought macaphoney & cheese left overs with me for lunch today!  ;D
Thanks for the advice.  I'll have to try my luck at the lasagna!

Hi Jan! :)

Tofu can be very slippery.

I think Umpa means by "scoring" is to cut criss-cross lines slightly into the tofu to act as "grabbers"
that stop (or slow) the other ingredients between the layers from sliding when serving.

My friends at House Foods have supported our FTS mission for several years now and they have a wonderful TOFU recipe section on their web site. Many of these recipes will need to be converted to low carb but this will open the TOFU flood gates for you to new ideas.  ;)

Yes Tony ;) Whether its pasta,tofu,eggplant, zucchini or cabbage its a lot easier to serve and eat when you score (cut) the pasta replacement.That way when you cut it with a fork it doesn't slide apart. Your bottle blond sister :D

Umpa, you always make me smile!  A friend of mine is in cosmetology school, and a few months ago I let her put some brown low lights in my hair! (...though in my profile pic, it looks more like I have on a brown head band!  ha ha)    Now that it's almost summer, I may have to go platinum soon!   ;D  I love the color of your hair!

I find this is true with most any food with a flat smooth surface including some pastas.
That's why most lasagna noodles have ridges.

And sis... As you probably know, pasta lives ONLY in my pre-FTS life. ;)

thank you Jan ;) Its extra light ash blond,that way it doesn't grab red.
Tony doug and i have been playing with the different pasta products from the asian grocer made out of konjac and gotta tell you they are pretty yummy! I bought the blocks and I am gonna try to cut lasanga noodles out of them. ;)

Cool!... Let us know how they turn out.

My wife refuses to eat konjac root noodles.
She doesn't like the texture... I guess it just leaves that box of konjac in the garage for me! ::)
She likes tofu if prepared in a recipe that has a robust flavor.

For those applications where you'd like super-thin noodles (e.g. soups), I wonder if slicing them with a mandolin would work?
