One Minute muffins

 :)  :) I just made the one minute muffin and it was delicious. I wonder if I can add a bit of walden farms sf chocolate syrup to the muffin . Except for GG crackers all I have tried have been good. Meatloaf tonight...

The great thing about the OMM is that you can add ANYTHING to it! :)

This morning I made it as toast with WF fruit spread. I've added chocolate syrup, cinnamon, dill, garlic salt, etc. I like this recipe so much because I can make it different every time, rather than have a whole loaf of something.

How many carbs are in the one eggs , butter, almond flower, splender and water? I will be trying the sf chocolate syrup tomorrow.

Most eggs are about 1 carb. Almond flour varies, I think. Umpa uses mostly the NOW brand, which I think is the lowest. Bob's Red Mills almond flour is 3 per 1/4 cup. I prefer flaxmeal, which is 0 carbs, but not everyone likes it as much. I'm not crazy about the almondy taste in the flour, which is weird because I love almonds. Flax reminds me more of a whole wheat.

I use goldenflax for my OMM.I use the Now brand almond flour which is 4 carbs per cup.The splenda is one carb per packet or 24  carbs per cup. :)

I love Golden flax, reg flax and almond.. I am not fond of coconut flour.. YUK!!!
I love the OMM because you can make it any flavor you basically want...

I make a lot of the "muffins" for husbands lunch.  He no longer eats "Little Debbies"  :o  To give him a variety I use the Polaner Sugar Free jellies or Fifty50.  I don't like the muffins made from just one flour so I combine them.  I have also added mayo for moisture because I bake my muffins in the oven.

FTS MUFFINS WITH SUGAR FREE PRESERVES/JELLY (3 Batches)

4 Tbl      Melted Butter   (½ stick)

3 each      Eggs
3 Tbl      Heavy Whipping Cream
4 Tbl      Sugar Free Preserves or Jelly from list
1 Tbl      Vanilla Extract
2 Tbl      Mayo

1/4 + 1/8 C   Golden Flax (0)
1/8 C      Almond Flour (.5)
1/4 C      Carb Quick (1.5)
1 ½ tsp      Baking Powder
4 Tbl      Xylitol   


Preheat oven to 350 degrees
Melt butter on low

Use a medium size glass measuring pitcher and add all wet ingredients.  Mix well with long handle spoon.  Add melted butter and mix again.  In a small bowl mix dry ingredients and slowly add to wet ingredients while mixing.  Mix well and pour into foil cupcake liners.

Should make 12 cupcakes
Bake at 350 degrees for 25 minutes or until toothpick comes out clean

Butter (any 0 carb)
Eggs (Egglands 0 carb or any 0 carb eggs)
Heavy Whipping Cream (Pet Brand from Walmart 0 Carb)
Polaner or Fifty50 Sugar Free Jelly (see below)
Mayo (any 0 carb)

Polaner Sugar Free Apricot Jelly (serving size 1 Tbl)
Polaner Sugar Free Grape Jelly (serving size 1 Tbl)
   Total Carb      4
   Total Fiber      3
   Sugar Alcohol      0   Net Carb 1         4 Tbl 4

Polaner Sugar Free Blackberry Jelly (serving size 1 Tbl)
Polaner Sugar Free Orange Jelly (serving size 1 Tbl)
Polaner Sugar Free Raspberry Jelly (serving size 1 Tbl)
Polaner Sugar Free Strawberry Jelly (serving size 1 Tbl)
   Total Carb      5
   Total Fiber      3
   Sugar Alcohol      0   Net Carb 2         4 Tbl 8

Fifty50 Sugar Free Apricot Spread (serving size 1 Tbl)
Fifty50 Sugar Free Blackberry Spread (serving size 1 Tbl)
Fifty50 Sugar Free Strawberry Spread (serving size 1 Tbl)
   Total Carb      3
   Total Fiber      0
   Sugar Alcohol      2   Net Carb 1         4 Tbl 4

Fifty50 Sugar Free Raspberry Spread (serving size 1 Tbl)

These are the Polaner Blackberry Muffins, each muffin is just under 1 carb...yummy

I made them in my new silicone muffin cups in the micro wave this morning, PERFECT!  Chocolate is our favorite.  I use NOW Almond Flour (not a fan of Flax).

Suz those look good . The recipe has 3 batchs is that 36 muffins in all ?  The directions say 12 cupcakes . I am confused which happens often so its not your recipe it is me . LOL

So my questions is if mix this together

I ordered from Amazon.  Mine are individual cups.  2 batches of the OMM make 6 muffins.  Makes it handy to eat a couple at breakfast and bring 1 for a snack to work!  :D
