zucchini cinnamon pecan muffins

Zucchini cinnamon muffins
Preheat oven to 350

Ingredients
1 chopped small zucchini (cooked, I used leftovers!) 3 g net carbs
4 eggs
1 ½ cups almond meal
½ teaspoon salt
1 teaspoon baking powder
½ cup xylitol
3 T cinnamon
1 tsp vanilla extract (mixed it with a little xylitol first)
¼ cup of chopped pecans

Beat 4 eggs. Mix almond flour with baking powder and add to eggs. Add rest of ingredients. Spray pan with Pam or grease with olive oil and put batter in pan or muffin tins. Bake at 350 for 20 minutes in preheated oven.

I don't think anything but the zucchini has carbs in it. So, if I'm right, it's 1/4 of a gram per muffin. My kids and husband even loved them!

Almond meal defo has carbs. 3 carbs per 1/4 cup.....

Well, I'm just wrong! I looked up the stuff online, but I guess my sources should have been double checked.

I did the math and the entire recipe equates to 28.85 carbs. I don't know how many muffins it makes though.

zucchini - 3 carbs
4 eggs - 2.4
1.5 cups almond meal - 18
1 teaspoon baking powder - 1.3
1 Tablespoon cinnamon - 3
1/4 cup chopped pecans - 1.15

Total = 28.85

These are fantastic! I didn't have leftover zucchini so I used a raw one that I shredded. I also made it into a bread and baked it for 50 minutes. WOW!

So I'm even more confused now.
I made Umpa's spinach bread and am still trying to work out the total carbs (as I had to substitute some stuff).
According to her recipe its 18 carbs for the whole loaf.
If the calculations above are correct, it would be 18 alone for the almond meal!  That's not adding in the eggs, spinach and baking powder.

HELP!!!!!! :o

No worries Toddy! My carb counts are correct. :D Different brands of almond flour have different carb counts.Everything I use is the lowest.I did alot of research on my flours for my bakery book.Enjoy the spinach bread.It makes a good pizza crust too!
