Coconut Cake, Oh MY!!

Baked half a recipe of Umpa's Coconut Cake (from the FTS Baking Book) and it was AMAZING! My hubby and I each had a piece and I shared a piece with the neighbor (froglvr) and put the two leftover slices in the freezer. I made 5 servings at 2 carbs each but only making half the recipe and baking it in a loaf pan. Turned out FANTABULOUS! Thank you, Umpa, for your amazing cookbook. I'm SO looking forward to trying more of your delicious looking dishes!

Oh yes!  I've made that and it was wonderful!  I'm sitting here working on my grocery list.....adding unsweetened coconut to my list today!  Thanks Alicia!!

Umpa's Coconut Cake is a staple around here.
If I don't make it at least once a month, my wife reminds me about it with insistence.

That cake is one of the MANY reasons FTS is such a pleasant lifestyle.

Try out the Berry, Berrylicious Cheesecake... It's soooooooo gooooooood!
