Yumm!!  Those do look good.  They are real close to what I think were called shired eggs that my mom used to make us.  She always used bacon instead though....very good  ;)

I just ate one of these - they are the BEST! Next time I'll check them before 20 minutes as the egg was (barely) close to rubbery, and I'll make them in the silicone muffin cups so they'll be easier to remove. I cut the Canadian bacon into fourths so it would fit in the bottom of the pan - that let the egg ooze through and that did not come out clean. But for YUMminess, it's a winner!

Good idea Sarah.  My mom always liked to make these for us at Christmas time because they are so easy, but said to use the throw away tins because the clean up was never fun...LOL  The silicone would sure make it easier.

I made these in silicone cups tonight and they were perfect! They fell right out of the cups. Delish!

I love my silicone bakeware but I have to honest i had a hard time wrapping my head around putting plastic in the oven :D

Me, too, Umpa! It seems like they'd melt! I can't stop myself from putting something under them. My excuse is that they're flimsy.

I wonder how these egg muffins would keep in the fridge. I've been baking them one at a time in the toaster oven... This reminds me... has anyone ever tried the 'omelet in a bag' breakfast where you put the ingredients in a freezer zipped-bag and moosh them up, then pop them in boiling water for several minutes?

They keep fine in the fridge for a few days Sarah.  I'm not sure for how long though because they don't last that long here  ;D  I do know that if you do the omelet muffins....they freeze great.  I just bake up a dozen or so and store in a freezer zip lock.  About 30 seconds in the micro to heat and you are on your way. 

I've never tried the omelet in the bag...how cool is that???  LOL

Gotta love the incredible egg  ;)

I've done that this past week but I called them mini-frittatas. I used a little turkey bacon on the bottom and mixed egg and egg whites with spinach and onion and a teeny bit of cheese and half and half. Then baked in a Texas muffin pan since they expand a bit. The rolled right out and when they cooled I kept them in a zip lock bag. Each morning a minute in the microwave and it was a quick breakfast. Of course it was better fresh but still ok. And def ok for when I'm up at 530a getting ready for work!
