I found the emulsions at Ross! They only had one jar of Orange and one jar of coffee, so I grabbed them both! What are your favorite things to do with them?! I'm excited to play with them!

Keep checking they get them in all the time.Orange is one of best ones.I use it for muffins cookies cakes and cheesecakes  in place of extracts.Emulsions are cheaper than extracts and stronger so taste as you learn to use them.The coffee one can be used where i call for real coffee in recipes like the coco loco rum cake(dougs favorite-one in fridge right now)just adjust your liquid.Coffee emulsion also goes great in chocolate recipes.I make a dreamsicle gelatin cheesecake with the orange that i love!the gelatin cheesecakes are in the new cookbook.I posted a couple for maddysmom so they are on the forum.

Speaking about Orange - what about zest? I haven't really seen it mentioned. I have some dried orange zest. Can it be used or does it have CaRbS?

I'll check it out. That did cross my mind when I typed 'extract' but I may have extract in the cupboard that needs to be used up, so...

Thanks! I'm crossing my fingers that one day I'll come across a pineapple emulsion that I can use in my jello stuff! That would make me a VERY happy girl.

They have them online too in every flavor.Just type in the company into google.I think they are $5.99 online instead of the $2.99 at Ross.
