Oat Fiber
« on: February 07, 2012, 05:50:26 AM »
I was just curious.  I've been scanning some low carb recipes on the web and I have run across a few that call for oat fiber.  Has anyone used this?  In doing a search it appears to be good stuff with 90% of it's weight is fiber..I'm not sure what it adds to a recipe as far as taste other than the extra fiber...Umpa and Doug what is your take on this stuff?

Morning from the Banks of the St. Johns,

I use it in a recipe for flaxmeal pancakes, works well 4 me. This stuff is
as close as U can get to a filler that is good 4U that I can see. Maybe the
others here have some more recipes using it . Stuff is  Very,Very low carb
4 sure.

Our best to you and yours,
Buford and the Girls (Princess and MissyBelle)

Thank you so much Guys  :)  You know the more I read about it the more I like it.  I think I'll get some and try some of the recipes to see what it adds if anything.  I'll pass along my results  ;)

Buford    I sure would like to know the recipe for the flax pancakes you are talking about ;)

Several years ago there was a buzz about using wheat and oat hulls to grind up for flour and there wasn't supposed to be any nutritional value, just fiber. I wonder if that's what this is. I never heard of it going commercial years ago...

I think that is exactly what it is Sarah but I'm not sure.  Who doesn't need a little more fiber especially when it doesn't add any carbs...LOL  I like the idea more and more

That didn't take long! Here's what I got from GrainMillers:
Our natural oat fiber is produced from food-grade oat hulls through a proprietary process. This is a chemical-free process, allowing us to turn organic hulls into various organic fibers. Oat fiber has many uses in bakery products, ready-to-eat cereals, meat extenders and snacks.

I was intrigued years ago and am even more so now! Can you imagine? It was pretty inexpensive, too. Something like $3.29 per pound on netrition.com. Maybe I can find it closer to home. I'm lookin'!

Thanks Sarah  :)  Please let me know what you think of it.  I'm gonna put an order in myself and give it a go.

So, how is this used? I read it can be used to add extra fiber to breads, cakes, etc. That wouldn't decrease the carbs, would it?

Rena I wouldn't think it would take any away.  It just adds extra fiber and maybe taste and texture?  One post on a recipe (and I can't remember where now..LOL) said that you didn't need to use it if you didn't have it but the recipe wouldn't taste or feel right.  But that the carb count would be exactly the same...that is what got me thinking about it.....  Hmmm  ::)  I wonder what it does add to a recipe.

Umpa the only thing I have had a chance to try with the TVP is the single serve oatmeal recipe in the micro.  It's pretty good.  I need to make time to play in the kitchen soon  ::)

It's my understanding, Birthday Girl, that you use it just like flour. I have some coming, so I'll do more research and let you know what I find.
