Grouper Florentine
INGREDIENTS
Grouper filets(any sturdy white fish will do)
Butter
Frozen chopped spinach
Chopped onion
Diced garlic
Bertolli Alfredo sauce
Cooking sherry
Cheddar cheese
Salt & pepper to taste

Preheat oven to 400 degrees. Squeeze the water out of a box of frozen spinach and place spinach in mixing bowl.  Rough chop 1/2  small onion and toss in bowl, add 1/2 jar of Bertolli Alfredo sauce, 1/4 cup of cooking sherry, two cloves of diced garlic, 1/4 cup of shredded cheddar cheese, and mix up the "goop." J Split the goop between two individual baking dishes that have been well buttered. Place a nice filet of grouper into the goop and press down, flip the filet over and salt & pepper, top it with a couple of tabs of butter and bake for 25 to 30 minutes.
for the kids i would add another 1/4 cup of cheese just to make it gooey! ;D

Fish Parmesan     using ground plain pork rinds as a coating dredge fish filets in an egg wash then the pork rind flour. pan fry in olive oil till golden brown on both sides. place the fish on a cookie sheet and place a couple of tablespoons of low carb pasta sauce on top, spread out the sauce and sprinkle a handfull of grated mozzarella over the fish. place under broiler until cheese is bubly. serve with spagetti squash or shirataki tofu noodles. Yum Yum!

Low Carb Fish Recipe BUTTERY BAKED COD...YUM!!!
« Reply #8 on: July 07, 2012, 08:48:01 AM »

I love this recipe we developed, it's simple and really delicious. We've had it twice in two weeks and it's definitely a keeper

BUTTERY BAKED COD

Ingredients

2 large cod filets
4 tablespoons ground hot and spicy pork rinds
1/2 stick melted butter
2 tablespoons lemon juice
salt and pepper to taste
2 small individual baking dishes

Directions

1- preheat the oven to 425 degrees
2- place a tablespoon of melted butter and a tablespoon of into each of the dishes
3- roll the fish around in the butter/lemon mixture
4- salt and pepper the fish
5- sprinkle the ground pork rinds over each filet equally
6- bake for 30-40 minutes or until the fish splits

Serve with a nice green salad or 1/2 avocado split with sour cream....YUMMY!
