Chicken Pot Cupcakes

Can we do this FTS style?

Chicken Pot Cupcakes

Ingredients
1 chicken breast, poached and diced
1 (14.5 oz) can cream of chicken soup
1 cup frozen mixed veggies
1 cup shredded cheddar cheese
1 Tbs Herbs De Provence
1 tsp onion powder
1 tsp garlic salt
2 (10 oz) cans Pillsbury biscuits

Directions
1Preheat your oven to 400.
2In a large bowl, combine the cooked chicken, cream of chicken soup, frozen veggies, cheese, herbs and spices.
3Lightly grease a 12-cup muffin tin and place the Pillsbury biscuits into each cup, pressing into the bottom and up the sides.
4Evenly spoon the pot pie mixture into each biscuit cup. Slide into the oven and bake for about 15 minutes. Check at the 12 minute mark.
5Let rest for about 3 minutes and dig in

Sarah I have to apologize to you too! I have been having computer issues and did not see this post :)
This can be done with the pork rind biscuits.I would put them in the muffin pan ,but prebake them for 5 minutes then fill them and top them.cream of chicken soup can be replaced with chickenstock and alfredo mixed.i always choose fresh veggies if I have them,but frozen will work .If its veggies that give off alot of water precook them.i would say the baking time will be closer to 20 minutes ;)

Thanks, Umpa! No need to apologize - I've been busy, too! These look so good, I just knew we could do it! I like fresh vegetables, too, and will try this with cooked fresh instead of frozen. It does look like a lovely dish for a wet, cold, windy day!

I see shrimp, hard-boiled eggs, cucumbers, radishes, are those salmon roses?, and parsley.  I would guess at thin sliced ham and cheese (maybe some mustard?) in the 'layers' and I imagine either a mayo or cream cheese 'icing'. Of course there is low-carb bread in the layers, too. It looks like fun - and something you could let your imagination run with, hm?

I don't know. :-\ I'm not sure how my tastebuds would react to a "frosted cake" that tasted like salmon!

This looks like a 21st century version of a sandwich loaf from the '50s.  I remember it with ham salad and egg salad between the layers and softened, colored cream cheese as the frosting.  It was standard fare at baby and wedding showers.

It does look like fun for a summer party. I do remember Mom making a loaf with deviled ham in one layer, now that you mention it, Andrea! I didn't like the deviled ham as a kid, so wasn't thrilled with the loaf. But this time I'll use things I like in it! I'll let you know how it works. Who said there's nothing new under the sun?
