Cheesy Meatball Soup

Totally new here!  Sorry--don't get the option questions.  I was hoping Umpa could convert this recipe and tell me how many Net Carbs per serving are in this soup.  IT IS FANTASTIC!  http://yourlighterside.com/cheesy-meatball-soup/

Here you go BlackSheepMama....welcome to the family!  8)



Crockpot Cheesy Meatball Soup
Meatballs
1 lb ground beef
1 egg
1 tsp salt
1 tsp oregano
1 Tbsp parsley
1/2 tsp garlic powder
1/2 tsp pepper

For the stock
2 cups organic beef broth (or stock)
1/2 green bell pepper, chopped fine
1/2 red bell pepper, chopped fine1 chopped celery stalk
1/2 cup chopped purple onion
5 large mushrooms, chopped
5 strips bacon (optional or for garnish)
1. Meatballs: mix ingredients together thoroughly.
2. Shape into medium size meatballs.
3. Place uncooked meatballs and all other ingredients (stock recipe), except cheese sauce, in 4 quart crock pot.
4. Stir gently.
5. Cover and cook on low 6-8 hours.

Cheese Sauce:
4 Tbsp water
4 Tbsp heavy white cream
4 Tbsp butter
8 slices American cheese

6. Preparecheese sauce by placing all ingredients in a microwave safe dish.
7. Microwave for 2-3 minutes, stirring every 30 seconds.
8. Add cheese sauce to the soup, stirring gently until blended.

Welcome Blacksheepmama! If I can help you please ask.Beautiful Recipe.Gotta try this one.I am a soup and sandwich girl.The carbs are in the veggies ,but there are alot of servings here makes alot.I agree with doug the flour just drys out the meatballs,you don't need it ;)

Thank you everyone!  I will figure this forum out soon!  Thanks for replying...I can't see where it says how many carbs per serving....anyone?

I need support!  Been bedridden with back issues for the last week.  STAYED true to the diet but did not lose one pound the whole week!  Is it because I was totally bedridden?  I've been on at total of 3 weeks and lost only 5 pounds.  Cut out all sugar alcohols, too!  (Just Splenda with my coffee)

You have a lot to deal with and pain does such unpredictable things to us.  5 pounds of weight loss is a great accomplishment and only one way to measure your success.  It's also likely that you are retaining fluid because of your lack of movement.  Since this is a lifelong commitment, not a race to a goal, let yourself enjoy the successes.

Losing any weight (or not gaining) while being bedridden is a MAJOR accomplishment.
So feel very proud of that 5 pound loss!

In time, you'll get the hang of FTS.
It's a big adjustment removing sugar from one's diet. But you'll do just fine! ;)

I love your picture,you are very pretty!Do you have the carb counter?The onions,mushrooms and peppers are 10 carbs in total.I don't know what kind of beef stock you use.It should be a zero.Everything else is a zero except the sliced cheese.Preshredded cheeses and pre sliced cheeses packaged are covered in potato starch so they don't stick together.Potato starch has carbs.So shred your own or head to the deli for fresh slices.Every pack of splenda is one carb. ;)

OH MY GOODNESS!!!  Did you say every packet of Splenda is 1 carb!?  That must be my problem.  I put 3 in my coffee and drink 2-3 cups a day! ;) I have been on Fat to Skinny before (unfortunately, I tend to go up and down 15 pounds depending on the seasons), I am FINALLY realizing I HAVE to make this eating my lifestyle!  But I've been on the diet a month now and can't seem to make the scale move at all! (Splenda didn't seem to be a problem before...hmmm).

Thanks for the compliment. ;)  And thanks for the carb info on the soup.  Good to know about the potato starch!

We just put out a sweetener called Zero which you will love.It is liquid splenda (succralose) that the carbs have been removed.The carbs are in the fillers.No tummy troubles either. ;) I love to use it for baking and coffee :)
