Cream Cheese Pancakes

I found this recipe online (pinterest):

Cream Cheese Pancakes
2 oz cream cheese
2 eggs
1 packet stevia sweetener
1/2 teaspoon cinnamon (optional)

Put all ingredients in a blender or magic bullet.  Blend until smooth.  Let rest for 2 minutes so the bubbles can settle.  Pour 1/4 of the batter into a hot pan greased with butter or pam spray.  Cook for 2 minutes until golden, flip and cook 1 minute on the other side.  Repeat with the rest of the batter.  Serve with sugar free syrup (or any syrup of your choice) and fresh berries.  A surprisingly satisfying substitute for the real thing.  Tastes like skinny fried cheesecakes!  Even if you aren't watching your carbs these are a delicious departure from the traditional doughy stack of pancakes.  And you won't have the sleepy feeling that usually comes afterwards!

BTW... That "sleepy" feeling is a symptom of a "sugar crash" after a glucose spike.
I've haven't felt one of those for quite some time now! ;)

OK here's the report;

1st, don't try to mix in a stand mixer....use a blender or bullet as the recipe calls for...if not the cream cheese won't dissolve enough and it will be clumpy.

They tasted good and reminded Umpa and I of crepes. I doubled the recipe and I replaced the Stevia with 3 drops Zero (for double batch) I used cinnamon and it was a good idea. I used butter on my griddle. Next time I'll use Kraft Philadelphia brand 1/3rd less fat cream cheese to cut the carbs in half, here's the pic along side a wonderful Italian sausage.

They were wicked good! Next time I will fill them like crepes with fruit and whip cream. ;)

I played with the recipe a little bit and cut back on the cream cheese a little and added 0 carb protein powder. They were good.

Yes, I have been running behind on the forum lately!  I've been busy at the office, and in the evenings too.  A lady in our community is having to stay with her mom who is having BOTH knees replaced.   So.....Madison and I have taken on the care of her horses while she is gone.  We are having a blast with them!  ;D
