I have an idea of dropping the cookies into mini-cupcake or candy cups, drizzling them with caramel and sprinkling them with a little more coconut to dress them up. Put in a pretty box, they would be a nice gift. I could give it to myself.
I did try putting a little Walden Farms caramel syrup on one and it was really tasty, but the syurp is too runny to treat the whole batch that way. Any ideas? I don't want to use Russell's caramels as they have malitol in them and I like the no-pain treats that these are now. Has anybody played with the caramel syrup to thicken it up, or have an alternative?
How about making these with peanuts and using some WF marshmallow dip for rocky roads? Or almonds and coconut just for the Joy of it? If we had a good crunchy cookie base, we could do some twicks.
