Chocolate Almond Ice Cream
Ingredients
1 ½ cups unsweetened vanilla almond milk
16 drops of FAT TO SKINNY Zero Sweetener or 2/3rd cup Xylitol
4 squares unsweetened bakers chocolate
3 cups heavy whipping cream
2 teaspoons vanilla extract
¾ cup chopped almonds
Directions
1. Chop or grate bakers chocolate in food processor.
2. Add sweetener to food processor with chocolate, mix well.
3. Put unsweetened vanilla almond milk in a microwave safe container uncovered in microwave for 4 minutes until hot enough to melt chocolate.
4. Turn on food processor with chocolate and sweetener and slowly pour in hot almond milk.
5. Blend until chocolate and Xylitol (if used) is melted.
6. Pour in medium size bowl and let cool completely.
7. Once cool pour in heavy whipping cream and vanilla and chill 2 hours.
8. Once chilled pour in ice cream maker and begin processing.
9. Process until ice cream reaches a very very thick but not completely frozen consistency then add almonds.
10. Continue to process to desired thickness.
TIP- Let ice cream soften a bit on counter before serving to enjoy a creamy consistency.
