Hoecake?

My Cami has been asking me to make this, and to be honest... It is a weakness food for me and I havent had the heart to try yet. I have will power, but I am not made of steel. lol Is there any hope?

cup self-rising flour
1 cup self-rising cornmeal or Jiffy Cornbread mix
2 eggs
1 tablespoon sugar
3/4 cup buttermilk
1/3 cup plus 1 tablespoon water
fry it in a combination of butter and crisco.

I see someone is from the south or has a love of the food HAHA!!  You are not alone there    I know I'm not Umpa but I'll take a stab at it.     I would just use Joagain's corn bread recipe and fry the batter out like you would a hoecake.  Very yummy    Here is the link to her recipe  http://www.fattoskinny.net/index.php?topic=1302.30  Hoecakes along side a big pot of lima beans and ham hocks...oh my!!     sigh.....

Hamhocks,Yummers ! I think I will try cooking up some hamhocks with black soy beans like I use to cook my pinto beans.Good job TooSweet
